We are delighted to be collaborating with some incredible chefs from Mexico to bring our guests some very special dishes from Mexico’s Los Cabos region from 8th to 19th November, starting with a tasting menu with drinks pairings on the evening of 8th November followed by 10 days of our specials board featuring some of the dishes bought to us by these chefs.
Los Cabos is a region with the sea, deserts and mountains all of which inspire its rich and diverse cuisine. It’s Mexico’s biggest farm to table destination and is the country’s biggest organic food producer with it’s food scene increasingly identified as a fusion of Mexican and Mediterranean with Asian influences.
Our special menu will showcase some of the incredible flavours of Los Cabos, transporting you to the region while enjoying these dishes at our London Bridge restaurant. Mexican chef Angel Cabral who owns award winning Mexican Japanese fusion restaurant Nicksan as well as chefs Javier Plascencia, Cesar Pita and Edgar Roman will each be curating special dishes alongside our co-founder Edson Diaz-Fuentes for this incredible menu.
We will have a limited number of tickets available for our Mesa Santa dinning experience on 8th November which will comprise of 5 courses, a welcome drink and drinks pairings for £95. The feast will begin at 7pm and be enjoyed at our Mesa Santa feasting table with Edson and the team guiding you through the culinary experience.
The menu will begin with Oysters todos Santos, created by Javier Plascencia, comprised of char grilled oysters, clarified butter, dried beef Machaca, ponzu and Serrano chillies. Angel Cabral will create his Baja Tuna Tostada made with sesame marinated tuna, avocado and wasabi foam, pickled onions and mustard leaves, Chef Edgar Roman will create an autumn vegetable Los Cabos ceviche with beetroot, yellow carrots, daikon and watermelon radish in seasonal citrus juices. Cesar Pita will curate a Baja Californian bean and chorizo tamal with seaweed mole and lobster and our co-founder Edson will create a special dessert.
We will have a selection of the chefs dishes available until 19th November for those who would like to join us to try these special creations in the coming weeks.
