All our dishes are prepared using traditional cooking techniques & some incredibly special & unique ingredients. As such we are a member of Slow Food.

We use several ‘Ark of Taste’ products, such as blue corn & Pasilla de Oaxaca, which are ingredients that Slow Food considers to be in danger of extinction due to the industrialisation of the food chain.
